Development of Functional, Nutritional, and Antioxidant Properties of Ice Cream — Master’s Thesis at the Faculty of Agriculture, Tanta University

   At the Faculty of Agriculture, Tanta University, under the patronage of Prof. Essawy Qassem Mahmoud, Faculty Dean, and Prof. Amgad El-Gammal, Vice Dean for Postgraduate Studies and Research, and hosted by the Department of Food Science and Technology headed by Prof. Magdy Shaheen, the scientific defense of a master’s thesis (dairy specialization) was held on Monday, April 6, 2026.

The thesis was submitted by researcher: Mona Sobhi Ali Moharram

• Prof. Mamdouh Ahmed Mohamed Omar — Professor of Dairy Science, Department of Dairy Science and Technology, Faculty of Agriculture, Al-Azhar University — External Examiner.

• Prof. Ashraf Shaaban Taha Bakr — Professor of Dairy Science, Department of Food Science and Technology, Faculty of Agriculture, Tanta University — Internal Examiner.

• Asst. Prof. Dina Ahmed Mortada Amer — Assistant Professor of Dairy Science, Department of Food Science and Technology, Faculty of Agriculture, Tanta University — Member of the Supervisory Committee.

   The committee thoroughly discussed the thesis with the researcher, who successfully addressed all questions. The committee commended the thesis for its outstanding scientific content and quality, and recommended awarding the researcher the Master’s Degree in Agricultural Sciences — Food Science and Technology (Dairy).

   The defense was attended by faculty members, teaching assistants, postgraduate students from the department and the faculty, as well as the researcher’s family and friends.
